Chip Mom’s Kitchen #31: Bacon-Bacon Pizza

So did you find yourself drooling at the thought of that release night pizza on Monday, or even back during Volume 5’s party? WELL NOW YOU CAN MAKE IT!

BACON-BACON PIZZA!

You’ve got some stuff to juggle, but you can handle it! PIZZA IS WORTH IT!

Quest Items:
2 tbsp butter
2 tbsp flour
heaping tbsp of diced garlic
garlic powder and garlic salt to taste
milk

1 cup water
1 tsp sugar
2 1/4 tsp yeast
1 tsp salt
2 tbsp olive oil
1 tbsp oregano
2 1/4 cup bread flour

10 slices bacon
10 slices canadian bacon
1 – 2 cups mozzarella cheese

Gather ’round all ye pizza things!

Over a low medium heat, melt butter and add garlic. Saute until golden brown.

Add your flour a half tbsp at a time, stirring to encorporate fully. Stir over heat until the flour mixture turns golden!

Stir in milk a splash at a time. Because of mysterious kitchen science, your mixture will actually ball up like playdough before it smooths out into a cream. Just keep adding splashes of milk and whisking out the lumps in between splashes. Eventually you will get to a creamy consistency perfect for pizza sauce.

Heat your water in the microwave to bring to 110*F. For me thats about 25 seconds. Stir in the sugar to make sugar water. Those yeasties are hungry!

Add sugar water to the yeast in your mixing bowl. Allow yeast to feast for 10 minutes!

Add your flour, olive oil, oregano, and salt to your yeast. Mix until the dough is tacky, but comes away from the bowl.

Turn out onto a floured pizza pan and let rest for 5 minutes.

Roll out the dough to the size of the pan using a floured rolling pin and stick into a preheated 450*F oven for 7 minutes to proof.

I am a crazy person who likes to flip her half cooked pizza dough after proofing. I just like the way it makes the crust feel.

Then I top it with an even layer of the garlic sauce, canadian bacon, cheese, and regular bacon. I use that order because I’ve found that it keeps the canadian bacon soft, while allowing the regular bacon to crisp! Into the oven for another 10 – 15 minutes.
