Chip Mom’s Kitchen #39: Strawberry Icebox Cake

So this is what the weather looks like in Arkansas right now:

Needless to say, I feel absolutely no desire to turn on my oven! That can’t keep the yummies from my tummies. So today, I made a three ingredient desert that requires your fridge instead…

Strawberry Icebox Cake!

Difficulty level:

This delicious layer cake is perfect for an easy treat or something to make with a kid chef!

Quest Items:
2 tubs of whipped topping
1 box honey graham crackers
1 package fresh strawberries
9 x 9 pan
spatula

I love three ingredient recipes.

Chop dem berries into bite size pieces! Honestly, I feel like you could pick the berry of your choice for this recipe. I’m thinking blueberries for next time!

Start with a layer of whipped topping on the bottom, followed by graham crackers, followed by whipped cream, followed by berries.

This puts whipped topping on either side of the graham crackers and as it sits, the graham crackers soften and become cake-y delicousness.

Finish your layering with berries and let sit in the fridge for at least 3 hours, though overnight is best!
