Texas Caviar

Super simple snack food for the impending warm weather!

Quest Items:
1 can black eyed peas, drained
1 can black beans, drained
1 can whole kernel corn, drained
1/2 cup red onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 jalapeño, seeded and diced fine
5 garlic cloves, minced
1/4 cup cilantro, minced
3 green onions or scallions, sliced thin
1/4 cup olive oil
1/8 cup red wine vinegar
2 teas kosher salt
Juice of 1 lime

Musical Accompaniment:

Drain and dump all the cans. I used pre-minced garlic so I put that in as well.

Chop, slice, and dice all that needs to be chopped, sliced, or diced and dump it in the bowl.

Dress with oil, vinegar, and salt and toss! Mom recommends the scoop tortilla chips for munching. You can also just eat it with rice, throw it on a topping for a burger or hot dog, or eat with a spoon!
