Chip Mom’s Kitchen #56: Pumpkin Spice Muffins

Okay, so before your eyes roll out of your head either from desire or the desire to run into the woods never to be heard or seen from again, hear me out. Yes, everything is Pumpkin Spice flavored, this recipe included. Yes, it’s overwhelming if you’re just not that into it. BUT

Two. Ingredients.

Pumpkin Spice Muffins


Difficulty level:

Stunningly simple and surprisingly delicious. If you are a pumpkin or spice cake fan, I would encourage you to try this super simple recipe!

Quest Items:
1 package Spice Cake Mix
1 leftover can of pumpkin
1 can of cream cheese frosting (optional, but delicious)

Somewhere upon the internet someone told me that if I toss the contents of the box and the contents of the can in my mixer, a delicious batter comes out. I’m not sure I believe it, but the blog moms of the internet have never steered us wrong before, right? Right?

Holy heck. It works! It takes a bit of whisking before it becomes fluffy enough to be considered a proper batter, but cool!

I put two scoops of batter in each paper liner (FYI, I am completely in love with my cookie scoop and feel that every baker should have one). The batter made about 18 muffins (give or take). Pop these little darlings into the oven at 375°F for 15 minutes and they should be perfect!

Narrator: They were, indeed, perfect!

I would honestly recommend these to anyone who needed something delicious to share but who was A) short on funds or 2) short on time or Z) new in the kitchen. You don’t need a fancy mixer; you just need a whisk, two packages, and some muscle power! Let me know if you give this one a go, and remember: Chip Mom Luvs Ya!
